Exploring the properties of meat
Oscar Mayer, a division of Kraft Foods, has developed a range of Carving Board Meats. These combine the distinctive look of freshly cooked and carved meat with the convenience of traditionally pre-packaged meat. Oscar Mayer requested Innovia to help with identifying techniques and technologies for improving the trade-off between appearance and shelf-life, increasing yield and modifying the carving process for greater efficiency.
Working with the Oscar Mayer team, Innovia examined fundamental food science issues, to develop structured hypotheses for the mechanisms causing sub-optimal performance. We suggested new ingredients and processes to address the issues, many of which originated outside the food industry, and researched a number of these in detail.
Oscar Mayer has since embarked on various projects to test Innovia’s ideas and incorporate them into their production processes.
